The recipe has been adapted from “Homemade Levity’s Detox Salad with Lemon Dressing” at The Roasted Root

This salad is packed full of cabbage family vegetables, which are also known as cruciferous vegetables and belong to the mustard or Brassica family. They include broccoli, brussels sprouts, collard and mustard greens, watercress, cauliflower, kohlrabi, wasabi, bok choy, kale, and cabbage.

Cruciferous vegetables provide a rich source of vitamins, phytochemicals,and minerals, as well as fiber. Plus, many have antiviral, antibacterial, and anti-cancer properties that help to boost the immune system and keep you disease-free. Many of the vegetables in the cabbage family also contain powerful detoxifying agents, so they’re beneficial for cleansing the digestive system and the liver.

And let’s not forget that these vegetables are generally very low in fat and calories, so they’re a great food to include in your weight loss/management program.

Dressing Ingredients

1/2 Cup Olive Oil

1/2 Cup Lemon Juice, Fresh

1 Tablespoon Fresh Ginger, Peeled And Grated

2 Teaspoons Whole Grain Mustard

2 Teaspoons Pure Maple Syrup, Optional

1/4 Teaspoon Salt, Or To Taste

Salad Ingredients

2 Cups Dinosaur Kale, Tightly Packed And Thinly Sliced

2 Cups Red Cabbage, Thinly Sliced

2 Cups Broccoli Florets

2 Large Carrots, Peeled And Grated

1 Red Bell Pepper, Sliced Into Matchsticks

2 Avocados, Peeled And Diced

1/2 Cup Fresh Parsley, Chopped

1 Cup Walnuts

1 Tablespoon Sesame Seeds

Method

Whisk together all ingredients for the dressing.

Pour the desired amount of dressing over the salad and toss until everything is coated.

Add the parsley, diced avocado, sesame seeds and walnuts, and toss again.

Serve as an entrée salad or as a side salad with your favourite meal.
